Spicy Buttermilk Coffee Cake

Makes 12 servings

  • 2 1/4 cups flour
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 1/4 tsp ginger
  • 1 cup brown sugar
  • 3/4 cup white sugar
  • 3/4 cup corn oil
  • 1 cup walnuts or pecans
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 egg beaten
  • 1 cup buttermilk
  1. In a large bowl mix flour, salt, 1 tsp of cinnamon, ginger, both sugars and corn oil. Remove3/4 cup of this mixture and to it add the walnuts/pecans and an additional cinnamon, mix well. set aside.
  2. to the remaining batter, add the making soda, baking powder, egg, and buttermilk. mix to combine. Small lumps are okay.
  3. pout batter into a well greased 9×13 2 inch pan. Sprinkle the toping mixture evenly over the surface. bake at 350 degrees for 40-45 minutes.
